WHITE TEA S, YELLOW TEA & OOLONGS
WHITE TEAS
White teas are among the finest and most natural teas in the
world. Only the youngest tea leaves are harvested for their
production. For some varieties, exclusively the unopened
buds covered in silvery down, are picked. Picking is followed by
natural withering and drying, which even takes place under sunlight
if the weather is right. This means that there is practically no
fermentation. The teas produced in this way are characterised by
a particularly fine, mild taste.

China Yin Zhen Silver Needle
– White Tea –
Originally, this very special tea was only
produced in Fujian. Fortunately, it is
now also offered from other Chinese
provinces, so that the supply has become
slightly larger. For this tea, only the
unopened, fresh buds are picked by
hand and carefully processed. The ivorycoloured, clear infusion of this tea offers
a wonderful, velvety-soft, fine taste.
A really very fine taste experience.

Organic China White Wings
– White Tea Organic –
A perfectly picked and processed white
tea from Southeast China. It is a fine
example of the “two leaves and a bud”
picking method. Because of its large
and open leaves, this tea is called White
Wings. The infusion is fragrantly flowery
with a very pleasant, mild flavour.

Unlike green tea, yellow tea is not processed immediately after roasting, but is wrapped in cloth or paper and left to cool. At intervals,
it is roasted and rewrapped again, and finally roasted one last time. This method produces a tea that is hardly fermented, but loses the
“grassy” taste of green tea.
